What is the history of canning? How does canning make food shelf stable? Do cans contain lead? Will commercially canned foods last forever?.

According to the U.S. Do crystals in canned goods mean the food is not safe? Canned seafood occasionally contains small fragments of a glass-like substance. Known chemically as magnesium ammonium phosphate, commonly called "struvite," the crystals can form from certain natural constituents of the fish or shellfish after they are commercially canned. Food and Drug Administration (FDA), these crystals pose no danger to consumers.

However, the normal cooking process for this product will not destroy the spores of Clostridium botulinum and Clostridium perfringens should they be present on the raw hams before canning.

We purchased organic olive oil in a metal container with a very thick and secure plastic lid and kept it for two years and had no problems when using it to cook. N general, there are three kinds of foods in our kitchens: perishable, semi-perishable, and shelf-stable or "nonperishable.".

Contrary to popular conception, it is not necessary for a food to be highly processed and full of chemical preservatives for it to be shelf-stable.

Most shelf-stable foods must remain sealed in their package to have the longest possible shelf-life. Nonperishable is generally used as a term to encompass foods that have both medium to long shelf-lives. These are opposed to any foods that spoil quickly, and would be considered perishable or semi-perishable. However, the term nonperishable causes confusion.
